16 oz ricotta cheese
2 cups shredded mozzarella cheese, divided
1 egg, lightly beaten
1- 10 oz package of frozen chopped spinach - thawed and drained
1/4 tsp salt
1/8 tsp pepper
3/4 tsp oregano
1 32 oz jar of spaghetti sauce
1 8 oz package lasagna noodles, uncooked
1 cup water

Combine ricotta, 1 cup of mozzarella cheese, egg spinach, salt, pepper and oregano in large bowl, mix well. Spread 1/2 cup of spaghetti sauce in greased 13 x 9 pan. arrange 1/3 of uncooked noodles over sauce, spread with 1/2 of cheese mixture. Add 1/3 remaining sauce, 1/3 lasagna noodles and other half of cheese. Spread 1/3 of sauce over cheese mixture. Top with remaining spaghetti noodles, remaining sauce and 1 cup of mozzarella. Pour water around edges, cover securely with foil and bake at 350 for 1 hours and 15 minutes. Remove foil and bake 15 minutes longer or until browned

This came out of a cookbook "Good Cookin' from the Heart of Virginia". We have since added browned Italian sausage to the spaghetti sauce so it isn't meatless. It is so much easier to use uncooked lasagna noodles rather than trying to assemble wet.
