Ingredients: 1/2 cup warm water 2 pkgs active dry yeast 3 1/2 cups warm liquid (water, milk, or potato water) 1/4 cup sugar 2 T salt 1/4 cup shortening 11 to 12 cups sifted all purpose flour

Directions: |
Directions:SOAK yeast in 1/2 cup warm water 5 minutes COMBINE liquid with sugar and salt. Stir to dissolve BEAT IN 4 cups of flour, yeast mixture and shortening with rotary beater until smooth ADD remaining flour, mixing with a spoon until dough leaves sides of bowl. Turn out onto lightly floured board. KNEAD thoroughly, adding flour as necessary, until dough becomes smooth and elastic and is no longer sticky (5-10 minutes). Place in lightly greased bowl. Grease top of dough; cover with waxed paper. LET RISE in warm place (80-85 degree) until doubled (1- 1 1/2 hours). Punch down and let rise again until nearly double DIVIDE dough in 4 equal parts; round up each portion SHAPE each into loaf; place in greased 9 x 5 x 3 in loaf pans. COVER and let rise in warm place until dough reaches top of pan and corners are filled (1 - 1 1/2 hours) BAKE in moderately hot oven (400 degree) 45 minutes. Cool on racks |

My mom, Nina, baked bread every week. We never had store-bought bread until we went to friend's houses or traded our sandwiches at school. We didn't know how good we had it!
