Alloco (Fried Plantains) Recipe

1. 2 Plantains (ripe…the skin should be brownish…the more brown the sweeter the dish)
2. tomato sauce
3. 4 large Tomatoes
4. 3 cloves of Garlic
5. 1/2 large Onion
6. 1/2 tsp Parsley
7. 1/4 large Green pepper
8. 1/2 tsp Black pepper
9. Salt

1. Wash your ripe plantain and cut the edges off
2. Cut the plantains in half like in the pictures
3. With your knife, cut the plantain in small pieces and but it into a bowl
4. Mince a small onion and add it into the bowl. (You do not have to add the onion, it's optional. I just like to add it because it adds to the aroma)
5. Add a pinch of salt to the plantains and onion and mix well
6. Set your pan on HI on the stove and pour two cups of vegetables oil in the pan and wait 2-3 minutes for the oil to heat up
7. While waiting for the oil to heat up…work on your tomato paste…
8. Mix the tomatoes, the onion, the green pepper and the garlic in a mixer and blend. Pour the mixture in a pot. Add the black pepper, salt and parsley. Put the pot on the stove on HIGH. Wait until all the water evaporates from the mixture and add 1 Tablespoon of vegetable oil. Wait 3 minutes to remove it from the stove
9. Back to our plantains….add the plantains in the oil pan. Reduce the heat to medium and wait for about 10-15 minutes until the plantains get that golden brown color
10. Fry on medium heat to avoid having the plantains darken too quickly
11. Turn it over as soon as one side turns brown…we want a nice golden brown color all over
12. Once cooked, pull the plantain from the hot oil and put them in a fried food strainer to remove excess oil and wait for about 3-5 minutes for the oil to flow
13. Serve the plantains with your tomato sauce as a dip.
14. For added protein, you may add some with boiled eggs, fried fish, fried chicken or baked chicken to your dish.
15. Et Voila! It's ready!
