"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
3 pounds of fresh spinach
1 pound of fresh blocked feta cheese
1 pound of cottage cheese (small curd)
1 block of cream cheese softened
3 eggs
2 onions
2 tablespoons of dried dill
Olive oil
2 pounds of Filo dough
1 pound of butter

Directions:
Directions:
Finely chop your onion and spinach. Take a large skillet and cover it with olive oil. Place your onion, spinach, and dill into the pan and saute it all together until cooked. Set aside to cool. In a large bowl, crumble your feta cheese. Next add your cottage cheese, and softened cream cheese blending all the cheeses together. On the side, beat your eggs and add to your cheese mixture. Next strain your onion/spinach/dill mixture to remove excess water. Add the spinach mixture to your cheeses once drained, being careful that it isn't too warm so eggs do not curdle in your cheese mixture. Mix all ingredients together.

Melt your butter in a bowl, having a food paint brush ready to use. Next open your filo dough, and cut it in half. Place the two halves on top of each other. Take a large piece of aluminum foil, and place it on a table, coat with butter to use as a work place. Take a piece of filo one sheet at a time, butter it, and add about 1 tablespoon of filling a quarter from the bottom.

Rolling procedure:
1. Fold the small bottom over the filling
2. Fold the left side over the filling
3. Fold the right side over the filling (At this point the dough should look like a log)
4. Butter the dough once more
5. Roll the dough away from you until finished
6. Butter edge closed and butter the entire roll

Place final roll on a buttered cookie sheet, and continue to do this until filling and dough is gone. To bake, heat oven to 350 and bake for about 35 minutes or until a nice golden color.
