1 onion, chopped
2 T unsalted butter
2-3 large carrots, sliced thin
1/2 tsp. cumin
1/2 tsp. salt
2 cups water or broth (veg or chicken)

Directions:
Directions:
In a saucepan, cook onion in butter over medium heat until soft. Add carrots, cumin, salt and water/broth. Simmer, covered, until carrots are soft, about 25 minutes. Puree in blender, or use immersion blender until smooth. Can top with toasted pecans.
