3 nice sized pheasants
water
2 tbsp instant chicken bouillon
1 recipe of pheasant barbecue

Pheasant Barbecue Sauce:
1 1/2 cups tomato juice
2 tsp instant chicken bouillon
1/2 tsp garlic powder
1 tbsp worcestershire sauce
1/4 cup cider vinegar
1/2 tsp pepper
1/2 tsp ground mustard
2 tbsp minced onion
1/4 cup brown sugar

Directions:

Split pheasants in half lengthwise; skin, wash, and pat dry with paper towel. Place in a large pot; cover with water and add bouillon. Heat to boiling point; lower heat and simmer for thirty to forty-five minutes. (Older, tougher birds take longer cooking time). Drain off water and place pheasant in a single layer in a baking pan. Cover with Pheasant Barbecue and bake in 350 degree oven for one hour or until tender. Baste often during baking time.

Barbecue Sauce Directions:
Combine all ingredients, mix well and pour over pheasant. If you are going to use this as a basting sauce for cooking pheasants on a grill. combine sauce ingredients in a small sauce pan and simmer, stirring often, for about ten minutes. Left over sauce may be kept in the refrigerator
