1½ cup Wesson Oil
2 cups sugar
3 eggs
2 tsp. vanilla
2 cups flour
1 tsp. salt
2 tsp. cinnamon
2 cups shredded carrots
1 can coconut or 1½ cups
1 cup pecans
1 cup crushed pineapple
1 tsp. baking soda

Directions:
Directions:
Cream oil and sugar. Add eggs and blend thoroughly. Sift flour, soda, salt, cinnamon. Add alternately with oil and egg mixture. Then add carrots, coconut, nuts and pineapple to batter. Blend well and pour into 2-9" pans, or 1-9x13 pan greased and floured. Bake 1½ hours at 350º.

Ice with white cream cheese frosting
