1 pound ground beef
3/4 cup chopped onion
1 1/2 tsp. garlic minced
salt and pepper to taste
1 red bell pepper cut into 1/2 inch pieces
1 orange bell pepper cut into 1/2 inch pieces
1 14.5 ounces can petite diced tomatoes
1 15 ounces can tomato sauce
1 14.5 ounces can beef broth
2 tsp. Italian seasoning
2 cups cooked white rice
2 tbsp. chopped parsley

Directions:
Directions:
In a large skillet, brown ground beef with onion and garlic until beef is no longer pink.
Drain grease from beef and dump into a large stockpot. Place stockpot on stovetop and add all of the remaining ingredients. Turn heat up to medium-high and bring soup to a boil. Then reduce heat to low, cover with lid, and simmer for 35-45 minutes. Add rice and parsley before serving.
