8 eggs (slightly beaten)
½ cup milk
9-10 oz. Italian Sausage, pre-cooked (I like Jimmy Dean Hot)
20 oz. hash browns, thawed (I use shredded)
Salt and Pepper
8 oz. shredded cheese (Monterey Jack, Colby Jack, or Cheddar)
1 Roma tomato, diced
2 tbsp. diced onion
2 tbsp. diced green bell pepper

Directions:
Directions:
1. Preheat oven to 350ºF.

2. Set aside 1 cup of the cheese.

3. Add eggs, milk, cooked sausage, hash browns, salt, pepper, diced tomato, onion and green pepper, and remainder of the cheese in a large bowl. Mix until combined.

4. Pour into greased 9x13 pan. Bake for 30-35 minutes. Take out and add remaining cheese. Place back in oven and cook for an additional 5-7 minutes.

I serve this to guests at brunch. They love it! I serve it with cinnamon coffee cake and grapefruit slices, and salsa on the side.
