4-5 c. sliced zucchini
1 lg. chopped onion
1 1/2 lb. hamburger
1/2 tsp. salt
1/8 tsp. black pepper
1 box stuffing mix
1 c. grated carrots
1 can cream of chicken soup
1 c. sour cream
Directions:
Directions:
Cook zucchini and onion 5 minutes in salted water then drain and set aside. Brown meat with salt and pepper. Drain fat and set aside. Mix stuffing according to directions on package. Spread half of meat in bottom of casserole dish. Next layer with half of stuffing mixture. In separate dish combine carrots, soup, sour cream and zucchini. Pour zucchini mixture over stuffing. Add the rest of the meat and top with remaining stuffing. Bake uncovered at 350º for 45 to 50 minutes.
