1 cup butter, at room temperature
1 cup sugar
1/2 cup brown sugar
1 large egg
1 tsp. vanilla
1 1/4 cups flour
1 1/4 cups quick-cooking rolled oats
3/4 cup coconut
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup raisins, chocolate chips, chopped chocolate and/or nuts (optional)

Preheat oven to 350°F. In a medium bowl, beat the butter and sugars until fluffy. Beat in the egg and vanilla. Add the flour, oats, coconut, baking powder, baking soda and salt (stir together first if you like), and stir just until blended. If you like, add some raisins, chopped nuts, and/or chocolate chunks or chips as you mix. Drop by the large spoonful onto a parchment-lined baking sheet. Bake for 12-15 minutes, until golden. Transfer to a wire rack to cool. Makes about 2 dozen cookies.

When I was catering I made these for a group of women that had a monthly meeting. A couple months later of the ladies came up to me and said " I loved those cookies you made." The friend beside her said "what cookies"? She said "You know those good cookies." I have called them that ever since.
