4 oz. dried angle-hair pasta
3 Tbs., plus 1 tsp. corn oil
1 large egg, lightly beaten
1 medium sized onion, halved and thinly slivered
1½ Tbs. curry powder
1 each small red and green bell pepper, thinly sliced
1 lb. medium sized shrimp, peeled and deveined
2 cups fresh mung bean sprouts
2 scallions, thinly sliced
¼ cup finely slivered fresh basil leaves, for garnish

1. Cook the pasta in salted, boiling water until just tender. Drain. Remove to a bowl and set aside.
2. Make an omelet: heat 1 tsp. of the oil in a nonstick skillet over medium-high heat. Swirl the oil so it coats the pan. When oil is very hot, pour the egg into the pan and swirl it. Cook for 1 minute, turn it over and cook 30 seconds more. Remove to a plate, cut into ½-inch wide strips, cover and set aside.
3. In the same skillet, heat the remaining oil over medium-high heat. Add the onion and cook for 3 minutes. Sprinkle with curry and cook for 1 minute, stirring. Add bell peppers and cook for 2 minutes.
4. Add the shrimp and cook for 3 minutes or until cooked through.
5. Add 1 cup of the mung beans, the scallions and the reserved pasta. Reduce heat to medium and gently combine all the ingredients.
6. Divide among 6-8 pasta bowls. Garnish with omelet strips, remaining mung beans, and basil. Serve warm or at room temperature.
