1 stick butter, softened
¾ cup sugar
1 Bakers Square semi-sweet chocolate square, melted
1 tsp. vanilla
2 pasteurized eggs (see note below)
Baked pie shell
8 ounce whipped topping
Finely chopped nuts for garnish if desired

Beat butter until fluffy. Add sugar and continue beating. Add chocolate, and vanilla and continue beating. Drop in eggs, ONE AT A TIME, beating 3 MINUTES after each egg. This is what makes the filling creamy and smooth.

Add filling to baked pie shell and refrigerate for an hour. Add whipped topping and nuts if desired and refrigerate overnight.

This was Hazel Moffett's recipe. It is John Moffett's absolute favorite pie. I used to make it a lot for special occasions.

We used to use raw eggs, but now we don't feel safe eating uncooked eggs. Either buy pasteurized eggs if you can find them, or pasteurize them by placing in a pan of water and heating to ONLY 140 degrees (use thermometer) and turn down the heat to keep at that temperature for 3 minutes.. Don't allow them to go above 140 degrees or they will cook. Then cool and use them in the recipe.
