2 cups packed fresh basil leaves
12 large garlic cloves
¾ cup freshly grated Parmesan or Romano cheese
½ cup pine nuts
⅔ cup olive oil

Directions:
Directions:
1. Blend basil and garlic in a food processor or blender to a fine paste, stopping occasionally to scrape the sides of the bowl. Add cheese and nuts and process until well blended. With machine running, pour olive oil through the feed tube or top of blender in a slow steady stream and mix until smooth and creamy.
2. Transfer pesto to a jar and cover the surface with a film of olive oil. Can be refrigerated for up to three months or frozen up to nine.

Note: Nice additions are: thinly sliced, drained sun-dried tomatoes in olive oil or ½ tsp. grated lemon.
