3 Tbs. butter
3 Tbs. flour
1½ tsp. salt
⅛ tsp. pepper
2 cups milk
1 cup (4 oz.) shredded cheddar cheese
5 cups thinly sliced peeled potatoes (about 6 medium)
½ cup chopped onion

Directions:
Directions:
1. In a large saucepan, melt butter under low heat. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Add potatoes and onions; stir well.
2. Transfer to a greased 2 quart baking dish. Cover and bake at 350º for 1 hour. Uncover; bake 30-40 minutes longer or until the potatoes are tender.
