1 c. margarine, softened
3/4 c. brown sugar
1/4 c. white sugar
1 sm. pkg. instant pudding mix (vanilla or white chocolate)
1 tsp. vanilla
2 eggs
2 1/8 c. flour
1 tsp. baking soda
1/2 c. quick oatmeal
12 oz. chocolate chips or 1/2 c. mini chocolate chips

Directions:

Preheat oven to 350º. Combine softened margarine, white and brown sugars, pudding mix and vanilla in a bowl. Beat until smooth and creamy, about 2 minutes. Beat in eggs. Gradually add in flour and baking soda. Once mixed, stir in oatmeal and chocolate chips. Drop by spoonfuls onto ungreased cookie sheet and bake for 10-12 minutes.

For variations, use different puddings or substitute raisins for chocolate chips and add in 1 tsp. cinnamon for Oatmal Raisin Cookies.
