3 hot Italian sausage, casings removed
2 tsp. olive oil
1 small onion, peeled and finely chopped
1 medium clove garlic, minced
1 sweet bell pepper, red or yellow, seeded and finely chopped
½ cup chicken broth
2½ cups ziti pasta (or other tube shape)
¼ cup minced parsley
3 Tbs. finely grated Parmesan cheese
¼ tsp. salt
ground black pepper

Directions:

1. Bring a large pan of water to the boil for the pasta. Break up the sausage into small pieces and brown in a heavy skillet. When cooked through, remove from the pan and drain the fat.
2. Put the olive oil into the pan. Add the onion and garlic; saute 5 minutes. Add the bell pepper; saute 3 minutes. Put the sausage back into the pan and pour in the chicken broth. Simmer 5 minutes.
3. Cook the pasta according to package directions. Drain and put back into the hot pan. Add the sausage mixture, parsley, Parmesan, salt and pepper. Toss well to coat the pasta and serve.
