12 oz. thin linguine or vermicelli
1 garlic clove, peeled
2 Tbs. chicken broth or water
1 Tbs. sesame oil
1 Tbs. vegetable oil
2 Tbs. soy sauce
2 Tbs. rice vinegar
2 tsp. sugar
½ cup smooth, unsweetened peanut butter

1. Bring 3 quarts salted water to a boil and cook pasta for 6-8 minutes or according to package directions. Drain and refresh under cold running water until pasta is completely cool. Drain again and pat dry with paper towels.
2. While noodles are cooking, puree garlic with broth, sesame oil, vegetable oil, soy sauce, vinegar, and sugar in a blender or food processor. Add half the peanut butter and blend until smooth. Add remaining peanut butter and blend until smooth. (If the sauce is too thick, add a few tsp. water.) Transfer sauce to a bowl and combine with noodles. Mix until strands are evenly coated. Store covered in the refrigerator for up to five days.
