Ingredients:  
2 liters ground cucumbers (you can use a food processor but don't puree)
2 liters ground onions (same as above)
⅔ cup pickling salt
6 green peppers - chopped
3 red peppers - chopped
1 liter ground celery, drained a bit (can use food processor)
5 cups white sugar
4 cups regular white vinegar
½ tsp turmeric
3 tsp dry mustard
3 T flour
½ cup cold water

1. Mix the ground cucumber and onion together in a bowl

2. Sprinkle pickling salt on top - DON'T mix it in yet

3. Cover the bowl with a towel and let stand overnight on the counter


Day 2
1. Stir then drain well and put into a pot

2. Add green peppers, red peppers, celery, white sugar and vinegar

3. Stir well then bring to a low boil for 10 minutes

4. Make thickening sauce by mixing together the turmeric, dry mustard, flour and cold water until no lumps remain (shaken in a jar works well)

5. After the boiling is done, add the thickening sauce and cook until thickened (a few minutes)

6. Fill jars and process in a hot water bath for 10 minutes
