½ cup water (lukewarm) and 2 packages dry yeast (blended)
1 cup lukewarm potato water
⅔ cup sugar
7 cups flour
2 eggs (beaten)
1 cup mashed potatoes
⅔ cup melted shortening
1½ tsp salt

Directions:
Directions:
Dissolve sugar, salt and potato water in a large bowl. Add egg, yeast mixture, shortening, and potatoes, blending after each addition. Add ½ of the flour and beat until smooth. Add rest of the flour gradually until all the flour is used up. Knead and then place in a buttered bowl. Sprinkle with flour and cover with wax paper. Refrigerate overnight or about 5 hours. Punch dough down. Make 6 rolls and braid. Brush with egg yolk and a little milk. Let raise about 1 hour. Bake on a greased cookie sheet at 350º for 50 - 60 minutes.

(1/2 cup raisins optional). Makes 2 nice size breads.
