1 gallon chopped green tomatoes
1 gallon shredded cabbage
½ cup salt
1 cup ground hot peppers
1 cup ground sweet peppers
½ gallon chopped white onions
9 cups vinegar
5 cups sugar
6 tbsp white mustard seed
3 tbsp celery seed

Large Cheesecloth
Bag of Ice
Canning jars with lids

Directions:

Combine the tomatoes, cabbage and salt in a very large bowl. Let stand overnight
(6-8 hours) with ice on top. Put in a cheese cloth and drain for several hours. You can help speed the process along by squeezing out the juice by hand. When there is no more liquid coming out of it add the peppers and onions.
In a large stock pot combine the vinegar, sugar, mustard seed and celery seed bring to a boil. Add in the tomatoe and vegetables boil for 15 Minutes. Place in hot canning jars while still boiling hot and they will seal.
Yields 15 pints.
Let stand for 8 days before eating.

For years mom and dad have helped me make the chow-chow. I love the family tradition and making lots of great memories. They have passed the family cheesecloth down to me, I guess that is their way of telling me they are done.
