4 cups sifted cornmeal
1 pinch salt
1 cup plain flour
3/4 cup sugar
1 egg
2 tsp baking powder
1 cup buttermilk
1 tsp baking soda
1/3 cup hot water

Directions:
Directions:
Mix sifted cornmeal with pinch of salt. Scald with 1 pint of boiling water and stir fast to keep from lumping. Put into 1 pint of water and set overnight.
Mix flour, sugar, egg, and baking powder. Take buttermilk and dissolve baking soda in it. Add buttermilk to the mixture. Stir all ingredients well. Bake in iron skillet at 375 degrees for 1 hour or until well done.
Sprinkle with hot water after it has baked and let stand a few minutes with a clean dish cloth spread over it.
