2 T. butter
1/4 C. flour
1 1 /2 C. heavy cream
5 oz. white cheddar cheese
1/2 T. seasoning salt
1/2 t. cayenne pepper
2 1/2 C. cooked chicken
1 1/2 C. Canned artichokes
1 1/2 C. fresh mushrooms
2 T. fresh lemon juice

Directions:

Cook butter and flour together over medium-low heat to make a roux. Slowly add cream, whisk an cook until smooth and thick. Add shredded cheese and seasoning and cook on low until cheese melts. Add trimmed and diced chicken. Quarter artichokes and mushrooms; toss mushrooms with lemon juice. Add artichokes and mushrooms to chicken and sauce. Please mixture in a large buttered casserole,or individual ones. Bake at 350º for 30 minutes, until hot and bubbly.
