Think spiral sausage - about 1 inch pieces (Arthur Ave. feta & parsley sausage
Bell peppers - about 1 inch pieces
Padron peppers
Yellow onion - sliced
Gold potatoes
Tomato paste
Garlic - Crushed and thinly sliced
Broth or water
Red pepper flakes
Emril Italian seasoning
Thyme
Parsley
Paprika
Adobo with cumin
Garlic powder
Salt
Pepper
Olive oil
Butter

Directions:
Directions:
Preheat oven to 425º. Cut sausage into chunks. Combine sausage, onion, peppers and garlic in large mixing bowl. Season well in olive oil, spices and fresh herbs. Wrap in foil with 4 slabs of butter spread beneath and 4 slabs of butter spread on top. Tightly seal and bake for 30-35 minutes. Open foil and continue to bake. Transfer to large cast iron. Add tomato paste. Mix thoroughly. Add broth and stir until well mixed. Cook covered for 10-15 minutes on 350º. turn up to 400-425º to crisp.
