1 Whole cauliflower
Dijon mustard
Pecorino romano
Butter
Olive oil
Parsley
Salt
Pepper

Directions:
Directions:
Preheat oven to 450º. Remove leaves, stems and core from cauliflower, keeping the head in tact. Combine and whisk oil, mustard, salt, pepper, parsley, and pecorino. Turn cauliflower upside down and pour half of the mixture getting into all creases. Place cauliflower into dutch oven and pour remaining half of mixture over the top. Sprinkle extra pecorino and paint with melted butter. Bake covered for 45 min - 1 hr.

Check cauliflower throughout cook time. Turn oven down to 400º if necessary maybe halfway through.
