1 lb SWEET ITALIAN SAUSAGE (casings removed)
1 lb GROUND BEEF
SLICED MUSHROOMS (optional)
8 cups COOKED WHITE RICE (cooked firm)
½ cup PARMESAN CHEESE
½ cup ROMANO CHEESE
⅓-½ cup of TOASTED PINE NUTS

SAUTE 2 LARGE DICED ONIONS IN A LITTLE OLIVE OIL ADD
1 lb SWEET ITALIAN SAUSAGE (CASINGS REMOVED)
1 lb GROUND BEEF STIR TILL ALL COOKED
AT THIS POINT I ADD SLICED MUSHROOMS AND COOK A FEW MORE MINUTES DRAIN SOME OF EXCESS FAT
ADD PEPPER
YOU CAN REFRIGERATE AT THIS POINT

MIX WITH 8 CUPS OF COOKED AND COOLED WHITE RICE. (COOK IT FIRM)
ADD 1/2 CUP PARMESAN AND 1/2 CUP ROMANO
ADD TOSTED PINE NUTS

HEAT 40 MIN IN CASSEROLE BEFORE SERVING
