1 2/3 cups all-purpose flour
1 teaspoon ground cinnamon
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1 cup vegetable oil (soybean oil)
1 cup plus 2 tablespoons granulated sugar
3 large eggs
3 tablespoons molasses
1 teaspoon vanilla extract
1 cup shredded carrot
1/4 cup crushed pineapple, with juice
1 cup raisins
3/4 cup chopped walnuts

Directions:

1. Preheat oven to 350 degrees F.

2. Combine the flour, cinnamon, baking powder, baking soda, and salt in a large mixing
bowl.

3. In another large bowl, combine the oil, sugar, eggs, molasses, and vanilla with an
electric mixer until smooth. Add the shredded carrot and pineapple, and mix until
well blended. Add the raisins and walnuts and mix well by hand.

4. Pour the flour mixture into the other ingredients and stir until combined.

5. Pour the batter into two greased 8-inch loaf pans. Bake for 45-55 minutes, or until
a toothpick stuck in the middle comes out clean.
