Cook meat separately if making on the stove. Add oil to skillet med- high heat. Sautee onion, peppers, celery and garlic 3-5 min. Combine into large pot over med-high heat. Add broth and simmer until broken down and blended.

Slow Cooker - Add oil to skillet med- high heat. Sautee onion, peppers, celery and garlic 3-5 min. Pour veggies and beans into slow cooker. Place meat on top and season well with spices. Blend roasted red peppers and juices in food processor until smooth. Add blended peppers to slow cooker. Cover. Cook on low 6-8 hours or high for 3-4 hours.
