½ cup Butter
¾ cup Sugar
2 Eggs
1 tsp. Lemon Extract
2½ cups Flour
1½ tsps. Baking Powder
¼ tsp. Salt
½ - ¾ cup Fruit Preserves

Directions:
Directions:
Cream together butter and sugar. Beat in eggs and lemon extract. Stir together dry ingredients and gradually add to creamed mixture; mix well.

Divide in half and chill thoroughly.

On lightly floured surface roll half of dough to ⅛ inch thickness. Cut with 2 ½ inch cutter.

Place on ungreased baking sheet; drop a level teaspoon of preserves in the center of each round.

Roll and cut remaining portion of dough; in the center using small cutter then center on top of the fruit preserves. Seal outer edges with a fork.

Bake at 375º for 12-15 minutes or until golden brown.
