8 C cubed peeled pie pumpkin ( or Butternut squash)
1 red onion, chopped
2 Tb grated fresh ginger
3 cloves garlic, chopped
1 small red chili pepper
1 Can coconut milk
3 C vegetable broth
2 Tb fish sauce
½ C chopped fresh cilantro
2 Tb lime juice
1 Tb packed brown sugar

Directions:
Directions:
In a slow cooker, combine pumpkin, onion, ginger, garlic, and red chili pepper. Pour in coconut milk, broth, and fish sauce.
Cook for 6 to 8 hours ( I always find it takes longer than you think)
Using an immersion blender puree the soup until smooth.
Stir in Cilantro, lime juice and brown sugar.
