1 unbaked pie shell
3 eggs
½ cup sugar
½ tsp. salt
½ tsp. nutmeg
2⅔ cup very hot milk
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 450º.

Place pie crust in 9-inch pie plate.

In large bowl, beat eggs lightly. Beat in remaining ingredients. Pour into pie shell.

Bake at 450º for 15 minutes, then turn oven down to 350º and bake for 10 to 15 minutes more. Pie is done when knife inserted from side of filling comes out clean. Center may be still a bit soft. Baking too long makes pie watery. Serve slightly warm or cold.
