2 cups cooked, diced chicken
1/2 cup chicken broth
1 can cream of chicken soup
2 cups cooked rice
1 can/pkg. chow mein noodles

Topping Ideas:
tomatoes, diced
olives, sliced
carrots, diced
green onions, diced
bell pepper, diced
celery, diced
mushrooms, sliced
apples, diced
mandarin orange wedges
avocado, diced
corn
peas/peapods
pineapple chunks
almonds, sliced
cashews
sunflower kernels
raisins/dried cranberries
shredded coconut
cheese, grated

Directions:

Cook chicken thoroughly and chop into pieces or shred. Add chicken broth and cream of chicken soup and blend well. Add seasonings to taste: salt, pepper or your preferred flavor. Serve over cooked rice. Top with a variety of toppings and chow mein noodles.

Stacie loves to serve this in large group settings. The more toppings, the better. Pay close attention to have many textures and flavors to top your haystack. Other than fresh toppings, you should be able to make this from your food storage stash.
