9 small potatoes
salt
1½ cups carrots
1 large white onion
1 Tb. Chicken Soup Starter OR Chicken bouillon (to desired taste)
3 cups milk
⅓ cup flour
1 tsp. pepper
Optional: 2 Tb. Butter
Cheddar Cheese
Optional garnish/flavor: chopped green onion and crumbled bacon bits

Cut potatoes into 2-inch cubes. Put in pot of cold water that covers potatoes. Add salt and bouillon. Cover and bring to boil. Simmer 25-30 minutes. Add carrots and onion (whole) to simmering pot for last 10 minutes. Note: onion is for taste if desired to eat, cut in bite-size pieces. In saucepan heat milk over medium low setting. Add flour to thicken 1 Tablespoon at a time. Use flour to desired thickness to resemble a thin gravy. Use a fork to check potatoes for doneness. Pour off all but 1 to 1½ cups of bouillon water. Pour in milk mixture over potatoes, carrots and onion. Simmer 10 more minutes to soak in flavors. Add additional pepper if desired and butter for extra flavor. Serve in soup bowls and individuals may add cheddar cheese, green onion and/or bacon for desired flavor.

This is a favorite comfort food that we love to enjoy on cold or rainy days at Kyle & Stacie's house. It is very filling but in a light milky broth.
