1½ c whole wheat pastry flour
½ c vanilla whey protein powder
½ c splenda
¼ c sugar
2 tsp baking powder
½ tsp baking soda
¾ tsp salt
2 c fresh cranberries, roughy chopped
1 c fresh squeezed orange juice
1 - 2 Tbsp orange zest
2 Tbsp full fat Greek yogurt
2 Tbsp vegetable oil
2 tsp pure vanilla extract

Preheat oven to 350º F
Line a 9x5 bread pan with parchment paper

In a medium bowl combine flour, protein powder, splenda, sugar, baking soda, baking powder and salt

Rough cut cranberries either by hand or with a few pulses in the food processor

In a large bowl combine cranberries, orange juice and zest, yogurt, oil and vanilla

Transfer dry ingredients into wet ingredients, stirring until just combined
Transfer batter into prepared pan

Bake for 45 to 55 minutes or until toothpick comes out clean with moist crumbs
