4 eggs
2 c. sugar
1 c. oil
2 tsp. coconut flavoring
3 c. flour
½ tsp. soda
½ baking powder
½ tsp. salt
1 c. buttermilk
1 c. coconut
1 c. nuts or almonds (optional)

Glaze:

1 c. sugar
½ c. water
2 tbsp. butter
1 tsp. coconut flavoring

Directions:
Directions:
Mix egg, sugar, oil, and coconut flavoring. Add dry ingredients (flour through salt). Then add buttermilk, coconut, nuts. Pour into greased loaf pans.

Bake at 325º for 1 hour or until an inserted knife comes out clean.


Drizzle with glaze while bread is warm.

Glaze: Boil sugar, water, and butter 1-2 minutes. Remove from heat and add coconut
flavoring.
