3 cukes with skins coarsely chopped 3 tbsp white wine vinegar 1 clove garlic 3 stems of lemongrass( 4 inches long), green leaves only without bulbs salt/pepper 1/2 cup olive oil

In a blender combine the cukes vinegar garlic lemongrass salt pepper. Work for 3-5 minutes. into a puree Add Olive oil beating constantly. Cover and refrigerate 3-4 hours.

I do not get much easier than this. Use non-waxed organic cukes skins, seeds, and all. Use a blender to puree.
