3/4 cup butter softened
3/4 cup brown sugar
1 egg
1 cup mixed lentils cooked, drained well, and pureed
1 tablespoon vanilla extract
2 cups old fashioned rolled oats
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk chocolate chips
1 cup slivered almonds
1/4 cup shelled pumpkin seed chopped
1/2 cup golden raisins

Preheat oven to 375°F. Oil a cookie sheet. Cream the butter and sugar together. Add the egg and mix well. Stir in the lentil purée and vanilla. Add the rest of the ingredients and mix well. Drop by spoonfuls onto the baking sheet and flatten with a fork. Bake 15 minutes or until cookies are golden. Cool on a rack.

TIP: To cook lentils, measure amount needed and rinse. Place in appropriate size saucepan. Add at least twice the amount of water as lentils. Cover and bring to a boil. Reduce heat and simmer 45 to 60 minutes for purée.
