German Potato Salad Recipe

6 Idaho potatoes
2 onions, chopped
6 slices of bacon, chopped and fried
Olive oil

Dressing:
½ cup vinegar
¼ cup oil
¼ cup water
1 tsp. sugar
1 tsp. flour
½ tsp. salt
¼ tsp. black pepper

Directions:
Directions:
Wash and place whole potatoes in a large pot of cold water and boil till soft - usually about 25 min. Prick with a fork at about 23 min. to see if they're done. Once a fork goes in easily and some potatoes are peeling a bit or are cracked, remove from heat and pour out water. Set aside and let potatoes cool - about an hour.

While potatoes are cooling, chop onions and fry in a little olive oil, then pour into a casserole dish.

Cut bacon into ½-inch pieces and fry till brown and somewhat crispy, but not burnt. Use a slotted spoon to remove bacon to a plate with a paper towel on it so some grease can drain off. Then put bacon in the casserole dish.

Peel and cut the potatoes in half and then slice. Place the potatoes in the casserole dish.

Make and stir in the dressing. You can serve immediately or chill before serving.
