3 eggs
2 cups sugar
1 cup vegetable oil
2 cups raw peeled zucchini (grated)
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon baking soda
3 teaspoons cinnamon
1 cup nuts (coarsely chopped)

Directions:
Directions:
Beat the eggs until light and foamy. Add sugar, oil, zucchini and vanilla and mix lightly but well. Combine the flour, salt, soda, baking powder and cinnamon and add to mixture. Stir until well blended; add nuts and pour into 2 loaf pans, 9x5x3-inches. Bake at 350 degrees F for 1 hour. Cool on rack.

Note: If using small pans, bake at 325 degrees F for 50 minutes.
