Ingredients:  
3 cups shredded cheddar cheese
1 cup mayonnaise
1/4 - 1/2 teaspoon garlic powder or to taste
1/4 - 1/2 teaspoon onion powder or to taste
1/4 - 1/2 teaspoon cayenne pepper or to taste (optional)
1 4 ounce jar diced pimentos, drained
1 4 ounce can diced green chiles (Hatch brand preferred), drained
Salt and pepper to taste

Directions:
Directions:
Combine all ingredients in a large mixing bowl and mix until combined. If desired, blend in food processor for finer texture. Refrigerate overnight for best flavor.
