2 8oz pkgs creme cheese, softened
¾ cup white sugar
2 eggs
1 large can of pie filling (I use 1 can cherry and 1 can blueberry)
1 T lemon juice
1 tsp vanilla
36 vanilla wafers (I use NILA wafers)

Directions:
Directions:
Beat creme cheese, sugar, eggs, lemon juice and vanilla until light and fluffy

Line small muffin pans with baking cups and place a NILA wafer in each cup

Fill the cups ⅔ full with creme cheese mixture.

Bake at 375º for 15 to 20 minutes or till set

Top each with 1 T pie filling.

I use 2 different kinds of pie filling to give a variety... but you end up with leftover pie filling...unless you double the recipe! ;-)
