Chicken Marsala Recipe

Ingredients: 2 cups Mushrooms sliced thick. 4 cups flour. 2 chicken breast; split and pounded thin. (thighs work too if you prefer dark meat) 1 cup Marsala wine (buy the real stuff, I don't recommend anything labeled "cooking wine" because its mainly just alcohol and does not really taste great) 1/3 cup medium body sherry. 4 tablespoons olive oil. 4 tablespoons granulated garlic. 2 tablespoons black pepper. 2 pads butter. 1 tablespoon seasoning salt. Pasta of your choice, I like using Penne for this recipe.

Directions:In a pot of boiling water begin cooking your pasta according to directions on package. Dry pasta usually takes as long as the time to cook the rest.
Split and pound out your chicken breast to approx. 1/4th inch thickness. Combine flour, granulated garlic, pepper and salt together in a large bowl. Add olive oil to a large cooking pan and set on Med-High heat. When oil is hot dredge chicken through flour mixture and place in pan. Cook till both sides are golden brown approx. 3-5 minutes per side. Remove from pan and place on plates covered.
In the same pan add butter and when it is melted add mushrooms. Sautee until desired tenderness is reached, usually 3-5 minutes. Add Marsala wine and Sherry and mix all together thoroughly. Let it reduce on medium heat for 3 minutes. When pasta is ready drain and add to your Mushroom sauce and cook for 1 to 2 minutes.
Plate chicken with spoonful of sauce over and pasta mushroom sauce on side. |
