3 cups Pumpkin (Use FRESH this is key) instructions below
12 oz Evaporated Milk
2 eggs lightly beaten
1 cup white sugar
1/4 cup all purpose flour (sifted)
1 tsp Vanilla Extract
1/2 tsp Salt
1/2 tsp Ground Allspice
1/2 tsp Cinnamon
1/2 tsp Ground Ginger
1/4 tsp Ground Cloves
1/4 tsp Ground Nutmeg

Render a Pumpkin. Takes time however; if you store up what you make in the freezer you can usually get about 15 cups of pumpkin from 2 good size pumpkins. Most pumpkin baking recipes require 3 cups of pumpkin.

Cut whole pumpkin in half. Remove the 'guts' scraping the sides of the pumpkin with a spoon like you would any other melon prior to serving. Save the seeds if you want to use them to bake and make your own. We have that recipe too.
Your choice-remove the rind now or wait until hot. It is easier with the pumpkin warm however your hands get Hot.
Slice your pumpkin into large bite size pieces. This makes baking faster.
If you have one of those cooling type trays that will fit into a baking pan put that on the tray and fill with water to just below the rack.
Place your pumpkin slices on the rack and bake in an oven at 300° until they are a burnt umber. Contrary to the canned organizations they do not turn orange.
At this point they just need to be mashed just like potatoes and stored in containers that hold 3c each. I then freeze the extra. This means fresh pumpkin pie even at Easter.

Place a pie crust into a 10" pie pan. No 10" pie pan - the leftovers go good in pancakes.

Combine all of the ingredients from above into a large bowl. You can use a mixer or a whisk but mix the ingredients well.
Pour mixture into your pie shell.

Place into a Preheated oven at 425°
Bake 15 min
Reduce heat to 350°
Bake 35-40 min.
Once the crust has become brown cover the pie with foil or a crust ring to keep the crust from burning.
Remove from oven and let cool.
