1 ½ c granulated sugar
½ c vegetable oil
3 large eggs
1 Tbsp pure vanilla extract
½ c light sour cream or nonfat greek yogurt
2 c all-purpose flour
½ c dark cocoa powder
1 Tbsp espresso powder (OPTIONAL)**
2 ½ tsp baking powder
½ tsp baking soda
1 tsp salt
1 ¼ c brewed coffee (OPTIONAL)**

**if you don't want to use coffee, you can use water

Directions:

1. Preheat ove to 350º

2. In a large mixing bowl, combine sugar, vegetable oil, eggs, and vanilla extract. Beat on medium speed until the eggs and oil are well blended and the batter is lighter in color.

3. Mix in sour cream and beat until well combined

4. In a separate bowl, sift together the dry ingredients. Then slowly add small portions of the dry mixture into the wet mixture on low speed until all ingredients are well blended.
** If adding coffee, alternate adding portions in between the dry mixture.

5. With a rubber scraper, scrape down the sides of the bowl and stir from the bottom to the top for one last good mix through.

6. Pour batter into a 9x13 inch pan and bake for 26-28 minutes. Once done, a toothpick should come out clean. Remove from oven and allow to completely cool before frosting.

One year for his birthday, my dad requested a chocolate cake. So as usual I consulted my friend Pinterest and found this bad boy. We were expecting a typical super chocolatey cake, but it ended up being so much better than that. It definitely deserves it's name, and will forever be a family favorite.
