1 cup oil
2 cups shredded zucchini
2 teaspoons vanilla
1 can (8 ¼ oz) crushed pineapple, drained
3 cups flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon salt
½ teaspoon baking powder
½ teaspoon cinnamon
¾ teaspoon nutmeg
1 cup nuts

Directions:
Directions:
Beat eggs; add oil, sugar, vanilla - beat until foamy. Stir in zucchini & pineapple. Then flour, soda, salt, baking powder, cinnamon, nutmeg and nuts.

Makes 2 loaves.

Bake at 350º 1 hour in greased loaf pans.
