½ lb. Chicken Breast, skinless, cut into 1/2" cubes
Kosher Salt
¼ tsp. Dried Oregano
1 tbsp. Olive Oil
3 Garlic Cloves, chopped
¾ lb. Grape Tomatoes, cut in half
Pinch of Red Pepper Flakes
1 tbsp. Fresh Basil, chopped
1 lg. Zucchini, spiralized
2 oz. Mini Mozzarella Balls, cut in half

Directions:
Directions:
Spiralize the zucchini into thick noodles.

Season the chicken with 1/2 tsp. salt, pepper and oregano.

Add 1/2 tbsp. oil to skillet and cook chicken over med-high heat until browned and cooked through, about 8 minutes. Remove and set aside.

Reduce heat to medium, add the remaining oil and garlic and cook until golden, about 1 minute. Add the tomatoes and red pepper flakes, and season with 1/4 tsp salt and pepper.

Reduce the heat to low. Simmer, covered until the tomatoes soften, about 15 minutes.

Increase heat to high, stir in the zucchini and basil, season with 1/4 tsp salt and cook 2 minutes.

Add the chicken back to the skillet and add the mozzarella and serve right away.
