4-5 cups Vegetable Broth
1 cup Polenta
1 bunch of curly leaf kale
1 small red onion
1 16oz can Mixed Beans
1 16oz can Fire Roasted Crushed Tomatoes
1 Teaspoon Minced Garlic
1 Teaspoon Died Basil
1 Teaspoon Dried Oregano

Directions:
-Dice the onion, stem and chop the kale, drain the beans

-Heat a small amount of olive oil in a pan.
-Saute the onion on low heat until the onion starts to caramelize.
-Add 2 cups of vegetable broth and garlic to the pan with the onions.
-Add the kale in batches allowing each batch to wilt until you've added all of the kale.
-Add the can of tomatoes and beans. Let pan simmer uncovered for 15 mins. If you have time, allow it to simmer up to 45 mins, covering and uncovering as needed.

- Boil 3 cups of vegetable broth in a pot. Whisk in polenta and reduce the heat. Allow it too cook for 5 minutes, stirring occasionaly.

- Spoon polenta into a bowl and top with kale/bean mixture.
