4 1 inch rib eye steaks (1 pound each)
¼ cup olive oil

Hot Granny Sauce
8 tablespoons unsalted butter
1 cup onion -- chopped
½ cup jalapeno - seeded, finely chopped
2 cups sliced mushrooms
¼ cup green onion -- finely chopped
1 tablespoon Worcestershire sauce
¼ cup beef stock

Seasoning Mix
2¾ teaspoons salt
2½ teaspoons paprika
1¾ teaspoons garlic powder
1¾ teaspoons onion powder
1¼ teaspoons dry mustard
1¼ teaspoons black pepper
1¼ teaspoons ground dried New Mexico chile peppers
1 teaspoon white pepper
½ teaspoon ginger -- ground

1. Combine the seasoning mix ingredients in a small bowl.

2. Make the sauce: Melt the butter in a 12-inch nonstick skillet over high heat. As soon as the butter melts and begins to sizzle, add the onions, jalapenos and 2 teaspoons of the seasoning mix. Stir well and cook, stirring frequently, until the onions are slightly translucent, about 6-8 minutes. Add the mushrooms and green onions and stir well, then add the Worcestershire and the stock. Bring to a full boil, stirring constantly, and cook 1 minute. Remove from heat & keep warm while you prepare the steaks.

It is important to have the steaks at room temperature. otherwise the surface will burn long before the interior is cooked.

Preheat oven to 250º. Place an ovenproof serving plate in the oven to warm.
Brush each side of steak with ½ tsp of olive. Sprinkle each steak evenly on one side only with 1½ tsp of seasoning mix. Heat the remaining olive oil in a 12" nonstick skillet over high heat. (Do Not Use a cast iron skillet for this recipe.) As soon as the oil begins to smoke add 2 of the steaks, seasoned side down. Sprinkle the top side of each steak with 1½ tsp if seasoning mix. At 2 min you will notice that the smoke coming from the pan will be darker & bluish gray. Reduce the heat to medium & cook until the cooked line on the side of the steak is ¼ inch high. About 2 min. Turn steaks & cook 5 min then turn & cook until steaks are your preference.
Place steaks on warmed platter. Repeat for remaining 2 steaks. Divide sauce among portions & serve.
