6-8 baking apples (depending on size) I used 2 Granny Smith, 2 Braeburn, 2 Fuji
1/2 lemon, juiced
1 cup white sugar
3 tbsp cornstarch
1/8 tsp nutmeg
1/2 tsp cinnamon
very tiny pinch of salt
2 tbsp butter
1 egg, beaten
ready to use pie dough (I used Pillsbury)

Prepare Filling:
Core and slice apples.
Add lemon juice, sugar, cinnamon, salt. Stir until sugar is dissolved.
Add cornstarch and stir until well blended.

Assembly
Unrolled 1 thawed pie crust and place in the bottom of the pie pan.
Pour apples into pie pan. Also pour any remaining juice from the apple mixture on top of the apples in the pie pan.
Dot the apple mixture with pieces of butter.
Place another sheet of pie crust on top of the apples. Fit the edges of the top crust inside the edges for the bottom crust. Seal the 2 edges together by rolling the bottom crust edge and pinching.
Cut some air vents in the top crust to allow steam to escape.
Beat egg and brush on top.
Bake at 375º for approximately 1 hour
