1 Tbls. + 1 tsp. sesame oil
2 eggs
1 sm. head cauliflower
½ c. frz. mixed vegetables
2 green onions
3 cloves garlic, minced
Salt and pepper
3 Tbsp. soy sauce*

Directions:
Directions:
Whisk 1 teaspoon sesame oil with eggs in a bowl and set aside. Chop cauliflower into big chunks. With grating attachment, grate cauliflower into rice form. If no processor, grate the cauliflower on a box grater. Measure out 4 cups grated cauliflower. Heat 1 tablespoon sesame oil in a wok or large nonstick skillet over high heat. Add cauliflower, green onions, and frozen mixed vegetables. Stir fry 3-4 minutes until cauliflower is tender. Add garlic, salt and pepper, and stir fry until garlic is fragrant, 30 seconds or so. Push mixture to the sides of the wok to create an opening in the center. Add eggs and scramble. Toss mixture to combine. Top with soy sauce and mix again. Serve hot. 3 servings.

*Substitute gluten-free Tamari with soy sauce.
